Ingredients

6 servings
Maida (all-purpose flour, plain flour)1¼ cups, for the patti
Water⅓ cup
Saltto taste, divided
Onion3, thinly sliced
Poha (flattened rice)⅓ cup, dry roasted and crushed
Cabbage½ cup, shredded
Green chilli2, minced
Coriander leaves (cilantro)2 tbsp, chopped
Kashmiri chilli powder1 tsp
Garam masala½ tsp
Chaat masala½ tsp
Cooking oil (vegetable oil)for frying, about 5 tbsp absorbed

Method

4 steps
  1. 1Make a soft dough of maida, water and a pinch of salt; roll thin rounds, stack with oil and flour between, roll again and cook lightly on a tawa. Peel apart and cut into strips.
  2. 2Mix raw onion, crushed poha, cabbage, chillies, coriander, spices and salt just before folding.
  3. 3Fold each strip into a cone, fill, and seal the end with flour paste.
  4. 4Fry at 170 C until golden and blistered.
Serve it like this

Pile in a paper lined basket with green chutney and ketchup. Serve hot with chai.
