Ingredients

Maida (all-purpose flour, plain flour)1½ cups
Sugar¾ cup
Orange juice¾ cup fresh
Orangezest of 2
Curd (plain yogurt, natural yoghurt)½ cup
Cooking oil (vegetable oil)7 tbsp
Baking powder1¼ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Salta pinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Heat the oven to 170 C and line a loaf tin. Rub the zest into the sugar with your fingers.
  2. 2Whisk in the curd, soda, oil, two thirds of the juice and vanilla.
  3. 3Fold in maida, baking powder and salt until just smooth. Pour into the tin.
  4. 4Bake 40 to 45 minutes.
  5. 5While warm, poke holes and spoon over the remaining juice mixed with 2 tbsp sugar from the batch. Cool in the tin.
Serve it like this

Serve thick slices with a little extra zest grated on top, with tea or a scoop of vanilla ice cream.
