Ingredients

4 servings
Fishmackerel or any firm white fish
Thick coconut milk⅔ cup
Egg1
Shallots5
Garlic3 cloves
Lemongrass1 stalk
Galangala thumb
Turmeric (ground turmeric)½ tsp
Dried red chilli6, soaked
Cashews4 candlenuts, or cashews
Kaffir lime leaves (makrut lime leaves)4, shredded
Jaggery2 tsp
Salt1 tsp
Cornflour (cornstarch)1 tbsp

Method

4 steps
  1. 1Grind shallots, garlic, lemongrass, galangal, turmeric, chillies and candlenuts into a paste.
  2. 2Blend fish with the paste, coconut milk, egg, jaggery, salt and cornflour into a smooth, soft paste. Stir in lime leaves.
  3. 3Spoon onto softened banana leaf strips and fold into parcels, securing with toothpicks.
  4. 4Grill or pan toast until the leaves char and the filling is firm and cooked through.
Serve it like this

Serve the parcels on a plate still wrapped, opened at the table, with nasi lemak or laksa or as a party snack.
