Paneer250 g, crumbled
Onion1, finely chopped
Tomato2, finely chopped
Capsicum (green capsicum, green bell pepper)½, finely chopped
Green chilli1, finely chopped
Ginger1 cm, grated
Turmeric (ground turmeric)¼ tsp
Kashmiri chilli powder½ tsp
Pav bhaji masala1 tsp
Butter1½ tbsp
Flour tortilla4 medium
Cheddar cheese1 cup, grated

Method
6 steps
1Mix a quarter of the onion with half the tomato, 1 tbsp chopped coriander, the chaat masala and lemon juice for the pico.
2Melt 1 tbsp butter on medium heat, cook the rest of the onion with ginger and chilli for 4 minutes, then capsicum and the rest of the tomato for 3 minutes.
3Add turmeric, chilli, pav bhaji masala and salt, then the paneer. Cook 2 minutes on medium heat and add the rest of the coriander.
4Lay a tortilla in a pan on medium heat, sprinkle half with cheese, add bhurji and more cheese, and fold.
5Brush the pan with 1 tsp butter. Cook on medium heat for 2 minutes a side, pressing gently.
6Cut into wedges and serve with the pico.
Serve it like this
Stack the wedges in a loose spiral on a round plate, crisp sides up. Spoon the pico in the centre and dust chaat masala around the rim.
