Paneer fried rice.

Ingredients

4 servings
Cooked rice3 cups, day old
Paneer200 g, small cubes
Carrot1, finely diced
Green beans8, finely chopped
Cabbage1 cup, shredded
Capsicum (green capsicum, green bell pepper)½, diced
Spring onion (green onion, scallion)2, chopped, whites and greens kept apart
Garlic2 cloves, minced
Soy sauce1 tbsp
Black pepper¼ tsp
Salt½ tsp
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Sear the paneer cubes in half the oil until golden on two sides, then set aside.
  2. 2Add the rest of the oil to a hot wok, then the garlic, carrot and beans. Stir fry 2 minutes.
  3. 3Add the cabbage, capsicum and spring onion whites and toss 1 minute.
  4. 4Add the rice, soy sauce, salt and pepper and toss on high for 2 to 3 minutes. Fold in the paneer and spring onion greens.
Serve it like this

Pack in a steel box with a small pot of ketchup. At home, serve in bowls topped with spring onion greens.
