Paneer300 g, cut into thick slices
Besan (chickpea flour, gram flour)¾ cup
Rice flour2 tbsp
Ajwain (carom seeds)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Chaat masala1 tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)for frying

- 1Sprinkle paneer slices with chaat masala and a pinch of chilli powder.
- 2Make a thick batter of besan, rice flour, ajwain, chilli powder, turmeric, salt and water.
- 3Heat the oil on medium. Test with a drop of batter.
- 4Dip, coat and fry a few at a time, turning once.
- 5Serve with mint chutney.
Serve it like thisDrain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
