Paneer tikki.

Ingredients

4 servings
Paneer200 g, grated
Potato1 large, boiled and mashed
Green peas¼ cup, boiled and crushed
Cornflour (cornstarch)1½ tbsp
Ginger½ tsp, grated
Garam masala¼ tsp
Cumin powder (ground cumin)¼ tsp
Salt½ tsp
Coriander leaves (cilantro)2 tbsp, chopped
Breadcrumbs⅓ cup, for coating
Cooking oil (vegetable oil)2 tbsp, for shallow frying

Method

4 steps
  1. 1Mix the paneer, potato, peas, cornflour, ginger, spices, salt and coriander and knead lightly.
  2. 2Shape into 12 small patties and coat in breadcrumbs. Chill 10 minutes.
  3. 3Shallow fry on medium heat for 2 to 3 minutes per side.
  4. 4Drain on paper and cool before packing.
Serve it like this

Pack three tikkis with ketchup or a mint curd dip. At home, tuck one into a soft bun for a mini burger.
