Ingredients

Mutton (goat meat)600 g curry cut
Potato4 medium, halved
Onion2 large, sliced
Tomato2 medium, chopped
Ginger garlic paste2 tbsp
Green chilli2, slit
Whole spicescinnamon, cloves, cardamom
Red chilli powder (indian red chili powder)1½ tsp
Turmeric (ground turmeric)½ tsp
Coriander powder (ground coriander)1¼ tsp
Cumin powder (ground cumin)¾ tsp
Garam masala¾ tsp
Cooking oil (vegetable oil)3 tbsp
Coriander leaves (cilantro)a handful
Saltto taste
Water2 cups

Method

4 steps
  1. 1Heat oil in a cooker, fry whole spices and onions until golden brown.
  2. 2Add ginger garlic paste, chilli and mutton and sear until browned.
  3. 3Add tomatoes and the spice powders and cook until soft. Add water and salt and pressure cook 5 whistles. Let pressure release naturally.
  4. 4Add the potatoes and cook 1 to 2 more whistles. Finish with garam masala and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
