Ingredients
Puff pastry1 sheet, rolled into a log
Sugar1 cup
Water½ cup
Lemona strip of peel
Cinnamon1 stick, plus ground to serve
Milk1¼ cups
Maida (all-purpose flour, plain flour)3 tbsp
Egg yolk6 yolks
Method
5 steps
1Boil sugar, water, lemon peel and cinnamon for 3 minutes to a syrup.
2Whisk flour into a little cold milk, then heat with the rest of the milk until thick. Pour in the hot syrup, then cool slightly and whisk in yolks. Strain.
3Roll the pastry into a tight log, slice into 12 rounds and press each into a muffin tin, thin at the base and up the sides.
4Fill three quarters with custard and bake at the hottest oven setting until blistered and charred in spots.
5Cool a little and dust with cinnamon and icing sugar.
Serve it like this
Serve warm on a small plate, dusted with cinnamon and icing sugar, with a strong coffee.
