Ingredients

6 servings
Fish6 pomfret fillets or thick slices
Fresh grated coconut1 cup
Coriander leaves (cilantro)1 big bunch
Mint leavesa handful
Green chilli4
Garlic5 cloves
Cumin seeds1 tsp
Sugar2 tsp
Lemon juice2 tbsp
Turmeric (ground turmeric)¼ tsp
Saltto taste
Cooking oil (vegetable oil)2 tsp, for the leaves

Method

5 steps
  1. 1Rub the fish with salt, turmeric and a little lemon and rest 15 minutes.
  2. 2Grind coconut, coriander, mint, chilli, garlic, cumin, sugar, lemon and salt to a thick chutney.
  3. 3Wilt banana leaf pieces over a flame, brush with oil, coat each fish piece thickly with chutney and wrap tightly, tying with thread.
  4. 4Steam the parcels for 15 to 18 minutes.
  5. 5Serve the parcels on the plate for each guest to unwrap.
