Ingredients

8 servings
Peanuts1½ cups, raw
Jaggery1 cup, grated
Ghee2 tsp, plus a little to grease
Water1 tbsp

Method

5 steps
  1. 1Dry roast the peanuts on low heat, stirring often, until they crackle. Cool, rub off the skins and split them in half.
  2. 2Grease a steel plate or the back of a tray and a rolling pin with ghee.
  3. 3Melt the jaggery with the ghee and water on low heat, stirring, then let it bubble until it thickens and darkens.
  4. 4Turn off the heat, tip in the peanuts and mix quickly until coated. Pour onto the plate and roll to about 5 mm thick.
  5. 5Score into squares while warm. Break along the lines once fully cool and store airtight.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
