Sabudana (tapioca pearls)1 cup
Potato2 medium, boiled and mashed
Peanuts½ cup, roasted and coarsely crushed
Green chilli2, finely chopped
Ginger1.5 cm, grated
Cumin seeds1 tsp
Coriander leaves (cilantro)a handful, chopped
Lemon juice2 tsp
Sugar1 tsp
Rock salt (sendha namak)to taste (sendha namak)
Cooking oil (vegetable oil)for deep frying (about 4 tbsp absorbed), peanut oil for a fast
Method

1Rinse the sabudana two or three times, then soak it in just enough water to sit a few millimetres above the pearls. Leave for 5 hours or overnight.
2Drain any water, spread the pearls on a plate for 10 minutes, then mix with the potato, peanuts, chilli, ginger, cumin, coriander, lemon, sugar and salt.
3With damp palms, shape into 12 flat discs about 1 cm thick.
4Heat the oil on medium. Fry 3 or 4 vadas at a time, turning once, until deep golden.
5Drain on a rack or paper and serve hot with curd or green chutney.

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
