Besan (chickpea flour, gram flour)1 cup split pea or chana flour
Maida (all-purpose flour, plain flour)1¼ cups
Instant dry yeast1 tsp
Baking powder1 tsp
Turmeric (ground turmeric)½ tsp
Cumin powder (ground cumin)½ tsp
Garlic2 cloves, grated
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)a little, minced
Saltto taste
Water1 cup warm
Cooking oil (vegetable oil)absorbed, for frying
Tamarindfor chutney
Sugarfor chutney
Coriander leaves (cilantro)for chutneyMethod
- 1Mix besan, maida, yeast, baking powder, turmeric, cumin, garlic, pepper, salt and water into a thick batter. Rest 30 minutes.
- 2Drop small spoonfuls into hot oil and fry until golden and round.
- 3Simmer tamarind, sugar, garlic, water and salt into a chutney and finish with coriander.
- 4Serve hot with chutney.
