Ingredients

4 servings
Pork500 g pork shoulder, very thinly sliced
Olive oil3 tbsp
Garlic3 cloves
Dried oregano1 tsp
Kashmiri chilli powder1½ tsp, for sweet paprika
Cumin powder (ground cumin)½ tsp
Lemon juice2 tbsp
Saltto taste
Pita bread4 large pitas
Tomato2, sliced
Onion1, thinly sliced
Potato2, cut into chips
Cooking oil (vegetable oil)for frying the chips, about 40 g stays in
Hung curd (greek yogurt)⅔ cup, for tzatziki
Cucumber½, grated

Method

4 steps
  1. 1Marinate the pork with oil, garlic, oregano, paprika, cumin, lemon and salt for 2 hours or overnight.
  2. 2Fry the chips until golden and crisp. Mix a quick tzatziki with yogurt, cucumber, garlic and salt.
  3. 3Cook the pork in a very hot pan in batches until browned and crisp at the edges, cooked through.
  4. 4Warm the pitas, then fill with pork, tomato, onion, chips and tzatziki. Wrap in paper.
Serve it like this

Wrap tightly in greaseproof paper, twisted at the bottom, and serve with extra tzatziki and lemon.
