Lobia, dry (dried black eyed peas)1¼ cups, soaked overnight
Red palm oil3½ tbsp
Onion1 large, chopped
Tomato3, blended
Tomato puree2 tbsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, minced
Ginger2.5 cm, grated
Garlic2 cloves
Ripe plantain (ripe nendran banana)2 ripe plantains (very yellow with black spots)
Cooking oil (vegetable oil)for shallow frying

- 1Boil the beans until soft but holding shape.
- 2Warm palm oil gently and fry onion, ginger, garlic and scotch bonnet.
- 3Add tomato puree and blended tomatoes and cook until thick.
- 4Add drained beans, a splash of their water and salt. Simmer 10 minutes, mashing a few.
- 5Slice plantains on the diagonal and shallow fry until caramelised. Serve with the beans.
Serve it like thisSpoon the beans onto a plate with fried plantain fanned alongside and a sprinkle of gari on top for crunch.
