Ingredients

Rava (semolina)1¼ cups fine semolina
Maida (all-purpose flour, plain flour)¾ cup
Sugar200 g for cake, 300 g for syrup
Egg5
Curd (plain yogurt, natural yoghurt)¾ cup
Cooking oil (vegetable oil)½ cup
Baking powder2 tsp
Orangezest and juice of 1
Lemonpeel of 1, for syrup
Water1½ cups, for syrup
Almondsflaked, to decorate

Method

5 steps
  1. 1Boil the syrup: 300 g sugar, water, lemon peel and some orange juice for 5 minutes. Cool.
  2. 2Whisk eggs and sugar until pale, then the curd, oil and zest.
  3. 3Fold in rava, flour and baking powder. Rest 10 minutes.
  4. 4Pour into a lined tin, scatter almonds and bake at 180 C until golden and springy.
  5. 5Cut into diamonds and pour over the cool syrup while the cake is warm. Rest an hour.
Serve it like this

Cut into diamonds and serve at room temperature with a flaked almond on each, alongside coffee or tea.
