Ingredients

4 servings
Pineapplechunks
Cucumberchunks
Raw mango (green mango)1, in chunks
Apple1, in chunks, or jambu
Firm tofufried tofu puffs, cut
Cooking oil (vegetable oil)for frying the tofu
Shrimp paste1 tbsp hae ko (prawn paste)
Jaggery2 tbsp
Tamarinda small piece, soaked
Lemon juice1 tbsp lime juice
Red chilli sauce1 tbsp chilli paste
Peanuts⅓ cup, roasted and crushed
Sesame seeds1 tsp, toasted

Method

4 steps
  1. 1Fry tofu cubes until crisp.
  2. 2Stir prawn paste, jaggery, tamarind water, lime and chilli into a thick, glossy sauce.
  3. 3Toss fruit, cucumber and tofu with the sauce and most of the peanuts.
  4. 4Top with remaining peanuts and sesame.
Serve it like this

Pile into a bowl or onto paper, drizzle extra sauce on top and scatter peanuts and sesame. Serve with toothpicks.
