Classic sweet seffa.

Ingredients

6 servings
Vermicelli500 g fine vermicelli (seffa noodles)
Olive oil1½ tbsp, for steaming
Butter4 tbsp
Sugar½ cup icing sugar
Cinnamon powder1 tbsp
Almonds¾ cup, blanched
Cooking oil (vegetable oil)for frying the almonds
Orange blossom water (orange flower water)1 tbsp
Salta pinch
Waterfor sprinkling

Method

4 steps
  1. 1Toss the vermicelli with the olive oil, then steam over boiling water in a couscoussier or colander for 10 minutes.
  2. 2Tip out, sprinkle with salted water and orange blossom water, separate with your fingers, and steam again. Repeat once more.
  3. 3Fry the almonds in the oil until golden, then roughly crush half.
  4. 4Toss the hot vermicelli with butter and mound into a dome. Decorate with lines of cinnamon, icing sugar and almonds.
Serve it like this

Shape into a tall dome on a round platter, draw cinnamon stripes from top to bottom and stud with almonds. Serve warm with a glass of milk or mint tea.
