Ingredients

6 servings
Maida (all-purpose flour, plain flour)4 cups
Instant dry yeast2 tsp
Sugar1 tsp in the dough, the rest to sprinkle
Salt1½ tsp
Waterabout 1 1/2 cups, lukewarm
Cooking oil (vegetable oil)for deep frying (about 90 ml absorbed)

Method

4 steps
  1. 1Mix flour, yeast, a pinch of sugar and salt. Add warm water and beat with your hand for 5 minutes into a very sticky, stretchy dough.
  2. 2Cover and rise in a warm place until doubled and bubbly, 1 1/2 to 2 hours.
  3. 3With wet hands, pinch off a ball, poke a hole through and stretch into a ring. Drop straight into oil at 180 C.
  4. 4Fry, turning, until golden and crisp. Drain and sprinkle with sugar or dip in honey.
Serve it like this

Serve piping hot, stacked or threaded on a skewer, sprinkled with sugar. Mint tea is mandatory.
