Classic sha phaley.

Ingredients

6 servings
Maida (all-purpose flour, plain flour)2½ cups
Waterabout 2/3 cup
Minced mutton (goat mince, ground goat)350 g beef or mutton mince
Onion1, finely chopped
Cabbage1 cup, finely chopped
Ginger2.5 cm, grated
Garlic2 cloves, grated
Spring onion (green onion, scallion)3, chopped
Soy sauce2 tsp
Cooking oil (vegetable oil)for frying (about 5 tbsp absorbed)
Saltto taste

Method

4 steps
  1. 1Knead flour, water and salt to a firm dough. Rest 20 minutes.
  2. 2Mix mince, onion, cabbage, ginger, garlic, spring onion, soy sauce and salt.
  3. 3Roll dough into rounds, add filling, top with another round and crimp the edges, or fold into half moons.
  4. 4Shallow fry on medium, turning, until golden and the filling is cooked through.
Serve it like this

Cut in half to show the filling and serve with a fiery red chilli sauce and a cup of butter tea.
