Ingredients

6 servings
Beef1.2 kg chuck, in large cubes
Butter3 tbsp
Onion4, sliced
Maida (all-purpose flour, plain flour)2 tbsp
Lager beer (lager)660 ml Flemish brown ale or dark Belgian beer
White bread2 slices
Prepared mustard2 tbsp, spread on the bread
Brown sugar1 tbsp
Vinegar1 tbsp
Bay leaf (indian bay leaf)2
Dried thyme1 tsp
Whole spices2 cloves
Salt2 tsp
Black pepper½ tsp

Method

5 steps
  1. 1Season the beef and brown in butter in batches in a heavy pot.
  2. 2Cook the onions in the same pot until soft and golden, then stir in the flour.
  3. 3Return the beef, pour in the beer, add bay, thyme, cloves, sugar and vinegar.
  4. 4Lay the mustard spread bread on top. Cover and simmer very gently.
  5. 5Stir, taste and adjust. Serve with fries and mayonnaise.
Serve it like this
