Ingredients

3 servings
Beefsirloin or flank steak
Soy sauce1 tbsp
Oyster sauce1 tbsp
Jaggery1 tsp
Black pepper½ tsp
Cooking oil (vegetable oil)2 tsp
Dried red chillichilli flakes
Rice1 tbsp, toasted and ground
Fish sauce1½ tbsp
Lemon juice2 tbsp lime juice
Tamarinda small piece, soaked
Shallots2, sliced
Spring onion (green onion, scallion)1, sliced
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Marinate the beef with soy, oyster sauce, half the jaggery, pepper and oil for at least 30 minutes.
  2. 2Grill or sear over high heat to medium rare or your liking, then rest 5 minutes.
  3. 3For jaew, mix fish sauce, lime, tamarind water, remaining jaggery, chilli flakes, toasted rice, shallots and herbs.
  4. 4Slice the beef thinly against the grain and serve with the dip.
Serve it like this

Fan the sliced beef on a board with the jaew in a little bowl, plus sticky rice, cucumber and fresh herbs on the side.
