Ingredients

4 servings
Prawns (shrimp)400 g, peeled and chopped
Mozzarella160 g Chihuahua cheese or mozzarella, grated
Corn tortilla12 tortillas
Butter2 tbsp
Onion1 small, chopped
Tomato1 large, chopped
Poblano pepper1, roasted and diced
Garlic2 cloves
Celery1 stick, finely diced
Dried oregano½ tsp
Lemon2 limes
Saltto taste

Method

4 steps
  1. 1Sauté onion, celery, poblano and garlic in the butter for 4 minutes.
  2. 2Add the tomato and cook 3 minutes, then add the prawns, oregano and salt for 2 to 3 minutes.
  3. 3Warm a tortilla on a tawa, scatter cheese, spoon on filling and fold.
  4. 4Toast each taco 2 minutes a side until the cheese oozes and the tortilla crisps.
Serve it like this

Serve three crisp tacos per plate with sliced avocado, salsa roja and lime wedges.
