Chicken, boneless4 boneless thighs, opened out flat
Hung curd (greek yogurt)½ cup, divided
Kashmiri chilli powder2½ tsp
Garam masala1 tsp
Ginger garlic paste1 tbsp
Lemon juice1½ tbsp, divided
Mustard oil1 tbsp
Salt1 tsp, divided
Cabbage2 cups, finely shredded
Carrot1 small, grated
Onion½ red onion, thinly sliced
Mint leavesa big handful, chopped
Mayonnaise4 tbsp
Chaat masala1 tsp
Burger bun4 buns, split
Lettuce4 leaves

Method

  1. 1Mix 80 g hung curd, the chilli powder, garam masala, ginger garlic paste, 1 tbsp lemon juice, mustard oil and 1/2 tsp salt. Coat the chicken and marinate 30 minutes.
  2. 2Toss the cabbage, carrot, onion and mint with the mayonnaise, the remaining hung curd and lemon juice, the chaat masala and 1/2 tsp salt. Chill.
  3. 3Heat a griddle or heavy pan on medium high heat until very hot. Cook the chicken 5 to 6 minutes a side, until charred and no pink remains in the thickest part.
  4. 4Rest the chicken 3 minutes. Toast the buns cut side down in the same pan on medium heat for 1 minute.
  5. 5Layer lettuce, chicken and a tall pile of slaw in each bun. Press the lid on gently.
Serve it like this

Stand the burger tall on a board with a skewer through the top, slaw spilling out, and a small pot of extra mint slaw and a lemon wedge alongside.
