Chicken, curry cut (bone in chicken, small pieces)750 g

Curd (plain yogurt, natural yoghurt)½ cup

Coriander leaves (cilantro)a handful

Cooking oil (vegetable oil)2 tbsp

Method
4 steps
1Fry sliced onions in oil and a spoon of ghee until deep golden; fry cashews and raisins. Set aside.
2Cook chicken with half the fried onions, ginger garlic paste, green chillies, tomato, curd, turmeric, garam masala and salt until tender and the masala is thick.
3In 2 tbsp ghee, fry whole spices and the washed rice 2 minutes. Add boiling water and salt and cook until rice is just done.
4Layer rice over the chicken with mint, coriander, fried onions, cashews, raisins, lemon and remaining ghee. Seal and dum on low 20 minutes.
Serve it like this
Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
