Ingredients

6 servings
Prawns (shrimp)250 g, peeled and deveined
White bread6 slices, a day old
Green chilli5
Garlic6 cloves
Peanuts2 tbsp
Egg white1 white
Cornflour (cornstarch)1 tbsp
Spring onion (green onion, scallion)2, finely chopped
Ginger1 tsp, grated
Sesame seeds3 tbsp
Cooking oil (vegetable oil)for shallow frying, about 50 g absorbed
Mayonnaise3 tbsp
Lemon juice2 tsp
Saltto taste

Method

5 steps
  1. 1Dry roast the green chillies and garlic in a pan on medium heat for 4 to 5 minutes, then add the peanuts for 1 minute. Pound coarsely with a pinch of salt.
  2. 2Pulse the prawns with the egg white, cornflour, ginger, spring onion, 1 tbsp thecha and salt to a coarse paste.
  3. 3Cut the crusts off the bread. Spread the paste thickly to the edges and press the topped side into the sesame. Cut into triangles.
  4. 4Heat 1 cm oil in a pan on medium heat. Fry paste side down for 2 minutes, then flip for 1 minute, until golden and the prawn is opaque right through.
  5. 5Mix 1 tsp thecha into the mayonnaise with the lemon. Serve the toasts hot with the dip.
Serve it like this

Stand the triangles in a staggered row on a long plate, sesame side up. Put the thecha mayo in a small bowl and scatter spring onion over the toasts.
