Classic thirattipal.

Ingredients

8 servings
Milk7½ cups, full cream
Lemon juice½ tsp, to grain the milk
Jaggery¾ cup, grated
Ghee1 tbsp
Cardamom½ tsp

Method

4 steps
  1. 1Simmer the milk in a heavy pan, stirring, until reduced by half. Add lemon juice.
  2. 2Keep cooking until reduced to a thick, grainy mass.
  3. 3Add jaggery and ghee and cook until brown and fudgy.
  4. 4Finish with cardamom.
Serve it like this

Serve a spoonful in a small bowl or on a banana leaf, at room temperature.
