Ingredients

4 servings
Toor dal (split pigeon peas)¾ cup
Rice1 cup, Ambemohar or any short grain
Turmeric (ground turmeric)½ tsp
Asafoetidaa pinch
Jaggery1 tsp, optional
Saltto taste
Ghee2 tbsp, to pour over
Lemon1, in wedges

Method

4 steps
  1. 1Rinse the toor dal well. Pressure cook with turmeric, asafoetida and 2 1/2 cups water for 4 whistles. Let the pressure release naturally.
  2. 2Cook the rice separately, or in a container on top of the dal in the same cooker.
  3. 3Whisk the dal until completely smooth. Add salt, jaggery and hot water to a pouring consistency and simmer.
  4. 4Serve the rice with varan poured over, a spoon of ghee and lemon on the side.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
