Ingredients

4 servings
Potato2, boiled and mashed
Carrot1, finely grated
Green beans10, finely chopped
Green peas½ cup, boiled and mashed
Cauliflower1 cup, grated
Paneer100 g, grated
Besan (chickpea flour, gram flour)⅓ cup, roasted
Onion1 small, finely chopped
Ginger2.5 cm, grated
Garlic3 cloves, minced
Green chilli2, chopped
Coriander leaves (cilantro)2 tbsp
Mint leavesa few
Garam masala¾ tsp
Chaat masala1 tsp
Dry mango powder½ tsp
Salt1 tsp
Cashews10, crushed
Cooking oil (vegetable oil)2 tbsp, for basting

Method

4 steps
  1. 1Steam carrot, beans and cauliflower 5 minutes and squeeze dry.
  2. 2Mix all vegetables with potato, paneer, besan, aromatics, herbs, spices, cashews and salt.
  3. 3Shape into long kebabs around skewers and chill 20 minutes.
  4. 4Grill or pan cook, basting with oil and turning, 10 minutes.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
