Ingredients

4 servings
Lettuce1 iceberg head, cut in 4 wedges
Gorgonzola½ cup blue cheese, crumbled
Mayonnaise¼ cup
Sour cream3 tbsp
Buttermilk¼ cup
Lemon juice2 tsp
Garlic1 small clove, grated
Bacon (streaky rashers, streaky bacon)5 rashers
Tomato1 large, diced
Spring onion (green onion, scallion)2 tbsp chives or greens, snipped
Salta pinch
Black pepperlots, cracked

Method

4 steps
  1. 1Fry the bacon in a dry pan until crisp, drain on paper and crumble.
  2. 2Mash half the blue cheese with mayonnaise, sour cream, buttermilk, lemon, garlic and pepper. Stir in the rest of the cheese.
  3. 3Cut the chilled iceberg through the core into four wedges and rinse off any grit.
  4. 4Spoon the dressing over each wedge and top with bacon, tomato and chives.
Serve it like this

Lay each cold wedge on its side on a flat plate, pour dressing over the top and scatter bacon, tomato and chives.
