Classic loubia.

Ingredients

4 servings
Dried white beans (haricot beans, navy beans)1½ cups dried white beans, soaked overnight
Onion1 large, grated
Garlic5 cloves, crushed
Tomato4, grated
Tomato puree1 tbsp tomato paste
Olive oil3 tbsp
Cumin powder (ground cumin)2 tsp
Paprika1 tbsp
Dry ginger powder (ground ginger)½ tsp ground ginger
Coriander leaves (cilantro)a handful, chopped
Flat leaf parsleya handful, chopped
Water4 cups
Saltto taste

Method

3 steps
  1. 1Put soaked beans, onion, garlic, tomato, tomato paste, oil, spices, half the herbs and water in a pot.
  2. 2Bring to the boil, then simmer partly covered until the beans are creamy and the sauce thick.
  3. 3Season, stir in the remaining herbs and simmer 5 more minutes.
Serve it like this

Serve in shallow bowls with olive oil drizzled on top and round bread for scooping.
