Ingredients

6 servings
Pork1.2 kg boneless shoulder, in 6 cm chunks
Cooking oil (vegetable oil)1 tbsp
Garlic1 whole head, smashed
Onion1, sliced
Vinegar½ cup cane or plain vinegar
Soy sauce⅓ cup
Bay leaf (indian bay leaf)4 leaves
Black pepper1½ tsp whole peppercorns
Brown sugar1½ tbsp
Water300 ml
Banana ketchup4 tbsp
Cabbage2½ cups, shredded
Carrot1, grated
Mayonnaise3 tbsp
Lemon½ lemon, juiced
Pav (soft bread rolls, soft dinner rolls)12 pav
Spring onion (green onion, scallion)2 stalks, sliced

Method

6 steps
  1. 1Brown the pork in the oil in a heavy pot on high heat in 2 batches, 4 minutes each.
  2. 2Add the garlic and onion for 1 minute. Pour in the vinegar and let it boil 2 minutes without stirring.
  3. 3Add the soy, bay, peppercorns, sugar and water. Cover and simmer on low heat for 2 hours.
  4. 4Lift out the pork and shred with two forks. Boil the sauce uncovered on medium heat for 10 minutes, then stir in the banana ketchup and return the pork.
  5. 5Toss the cabbage and carrot with mayonnaise, lemon juice and a pinch of salt.
  6. 6Split the pav and toast cut side down on a dry tawa on medium heat for 1 minute. Fill with pork, slaw and spring onion.
Serve it like this

Line the sliders up on a long board, each pinned with a toothpick. Pile extra slaw at one end and set a small bowl of reduced adobo sauce for dipping.
