Macaronielbow macaroni
Onion1 large, chopped
Garlic3 cloves
Capsicum (green capsicum, green bell pepper)1, diced
Tomato1 tin chopped tomatoes
Tomato puree⅔ cup
Beef stock (beef broth)2½ cups
Paprika2 tsp
Dried oregano1 tsp
Bay leaf (indian bay leaf)2
Worcestershire sauce2 tsp
Saltto taste
Cheddar cheesegrated, to top

- 1Brown the beef in oil with onion and capsicum until no pink remains. Add garlic and paprika.
- 2Add tomatoes, puree, stock, oregano, bay and Worcestershire and simmer 15 minutes.
- 3Stir in the macaroni and simmer, stirring often, 10 to 12 minutes until tender. Add a splash of water if needed.
- 4Season and top with cheddar, covered, until melted.
