Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 kg bone in pieces
Turmeric (ground turmeric)1 tsp
Salt1 tsp
Cooking oil (vegetable oil)3 tbsp
Onion1 large, sliced
Garlic6 cloves
Gingera thumb
Star anise1
Cinnamon1 small stick
Whole spicescloves and cardamom
Dried red chilli3
Kecap manis4 tbsp
Soy sauce1½ tbsp
Dark soy sauce2 tsp
Water1¼ cups
Potatochunks
Tomatowedges
Spring onion (green onion, scallion)sliced

Method

4 steps
  1. 1Rub the chicken with turmeric and salt and shallow fry in the oil until golden.
  2. 2In the same oil fry the onion, garlic, ginger, whole spices and chilli until soft.
  3. 3Add the kecap manis, soy sauces and water, then the chicken and potatoes. Simmer 20 minutes.
  4. 4Reduce until thick and the chicken shows no pink at the bone. Add the tomato and spring onion for 2 minutes.
Serve it like this

Serve in a bowl with plenty of sauce, steamed rice and a cucumber and onion salad on the side.
