Chicken, curry cut (bone in chicken, small pieces)bone in pieces
Turmeric (ground turmeric)½ tsp, to rub

Dried red chilli15, soaked, as chilli paste

Garlic6 cloves

Lemongrass2 stalks, bruised
Whole spices1 star anise, 1 cinnamon stick, 3 cloves, 3 cardamom
Tomato puree⅔ cup
Tomato ketchup (ketchup)3 tbsp
Jaggery1 tbsp
Thin coconut milk⅔ cup

- 1Rub chicken with turmeric and salt and shallow fry until golden and nearly cooked.
- 2Grind chillies, shallots, garlic and ginger. Fry in a little oil with whole spices and lemongrass until oil separates.
- 3Add tomato puree, ketchup, jaggery, coconut milk and salt, then the chicken. Simmer until cooked through and the sauce clings.
- 4Add peas and onion rings for the last 3 minutes.
Serve it like thisServe in a wide bowl with onion rings and peas on top, with ghee rice or plain rice and a cucumber pickle.
