Ingredients

Basmati rice2¼ cups, soaked 2 hours
Cooked fava beans (fava beans)300 g shelled and skinned broad beans
Dill leaves2 big bunches, chopped (or 15 g dried)
Lamb (lamb or tender mutton)2 lamb shanks, about 1 kg on the bone
Onion2, sliced
Garlic3 cloves
Turmeric (ground turmeric)1 tsp
Cinnamon1 stick
Saffrona big pinch, steeped in 3 tbsp hot water
Butter4 tbsp
Cooking oil (vegetable oil)2 tbsp
Saltto taste

Method

5 steps
  1. 1Brown the shanks in oil, add onion, garlic, turmeric and cinnamon and cook until the onion softens. Add water and salt, cover and braise.
  2. 2Boil the soaked rice in plenty of salted water for 6 minutes, adding the broad beans in the last minute. Drain.
  3. 3Toss the rice with the dill. Melt half the butter in a pot with a splash of water, then mound the rice in. Poke holes with a spoon handle.
  4. 4Cover with a towel wrapped lid and steam on low until fluffy, with a crust at the bottom.
  5. 5Drizzle saffron water and remaining butter over some of the rice. Serve with the shanks and their juices.
Serve it like this

Mound the rice on a big platter, saffron grains on top, with a shank on each plate and the juices spooned over.
