Ingredients

2 servings
Besan (chickpea flour, gram flour)1 cup
Waterabout 2/3 cup
Onion½, finely chopped
Tomato1 small, finely chopped
Green chilli1, minced
Coriander leaves (cilantro)a handful
Ajwain (carom seeds)¼ tsp
Turmeric (ground turmeric)a pinch
Red chilli powder (indian red chili powder)¼ tsp
Saltto taste
Cooking oil (vegetable oil)4 tsp

Method

5 steps
  1. 1Whisk besan with water, ajwain, turmeric, chilli powder and salt until smooth.
  2. 2Stir in onion, tomato, green chilli and coriander. Rest 10 minutes.
  3. 3Heat a greased tawa on medium. Pour a ladle and spread gently from the centre.
  4. 4Drizzle oil around the edge. Cook until the top dries and the base is golden.
  5. 5Flip and cook the other side for a minute. Serve with green chutney.
Serve it like this

Serve straight off the tawa, folded, with chutney and sambar in small bowls on the side.
