Ingredients

6 servings
Rice flour1⅔ cups
Baking powder2 tsp
Sugar½ cup
Salta pinch
Egg2 for the batter plus 1 salted duck egg, sliced
Thin coconut milk1¼ cups
Buttermelted, divided
Processed cheese (american cheese)grated, or kesong puti
Fresh grated coconutfresh, to serve

Method

5 steps
  1. 1Line small tins with wilted banana leaves and grease them.
  2. 2Whisk the rice flour, baking powder, sugar and salt, then the eggs, coconut milk and half the butter.
  3. 3Pour into the tins and bake at 200 C for 15 minutes.
  4. 4Top with salted egg slices and cheese and bake 10 minutes more, then grill 2 minutes to char.
  5. 5Brush with the rest of the butter and sprinkle with sugar and coconut.
Serve it like this

Serve warm on its banana leaf, topped with butter, sugar and fresh coconut, with hot chocolate or salabat ginger tea.
