Ingredients

6 servings
Rice flour1⅔ cups
Sugar½ cup
Baking powder2½ tsp
Salta pinch
Thin coconut milk1 cup
Water3 tbsp
Buttermelted
Processed cheese (american cheese)small slices

Method

4 steps
  1. 1Whisk the rice flour, sugar, baking powder and salt, then the coconut milk, water and butter. Rest 10 minutes.
  2. 2Fill greased moulds three quarters full.
  3. 3Steam over high heat for 10 minutes.
  4. 4Top each with a slice of cheese and steam 2 minutes more.
Serve it like this

Serve warm on a tray lined with banana leaf, cheese side up, with dinuguan or coffee.
