Ingredients

6 servings
Potato3, sliced
Zucchini (courgette, baby marrow)3, sliced
Brinjal (eggplant, aubergine)2, cubed
Red bell pepper (red capsicum, red pepper)2, in strips
Onion2, sliced
Tomato6, grated
Garlic5 cloves, sliced
Olive oil½ cup
Flat leaf parsleya handful
Dried oregano1 tsp
Saltto taste

Method

4 steps
  1. 1Toss all the vegetables with oil, garlic, oregano, salt and half the grated tomato.
  2. 2Spread in a large tray and pour over the remaining tomato.
  3. 3Bake covered at 190 C for 45 minutes, then uncovered, stirring once, until caramelised.
  4. 4Scatter parsley and rest 15 minutes.
Serve it like this

Serve warm from the tray with feta crumbled on top and bread for the oily juices.
