Classic Durban bunny chow.

Ingredients

4 servings
White bread1 unsliced white loaf, cut into quarters
Mutton (goat meat)600 g, small cubes
Potato2 large, quartered
Onion1 large, chopped
Tomato2, grated
Ginger garlic paste1½ tbsp
Curry leaves2 sprigs
Whole spices1 cinnamon stick, 3 cardamom, 1 star anise
Fennel seeds½ tsp
Red chilli powder (indian red chili powder)1 tbsp Durban masala
Kashmiri chilli powder2 tsp
Turmeric (ground turmeric)½ tsp
Garam masala1 tsp
Cooking oil (vegetable oil)¼ cup
Water2 cups
Coriander leaves (cilantro)to finish
Saltto taste

Method

5 steps
  1. 1Heat oil, fry whole spices, fennel and curry leaves, then onion until golden.
  2. 2Add ginger garlic paste and the chilli powders, turmeric and a splash of water. Fry, then add tomato and cook down.
  3. 3Add the mutton, coat well and cook 10 minutes. Add water, cover and simmer until nearly tender.
  4. 4Add potatoes and cook until tender and the gravy is thick. Finish with garam masala and coriander.
  5. 5Hollow each quarter loaf, keeping the scooped bread (the virgin). Fill with curry and top with the bread lid.
Serve it like this

Serve the filled loaf on a plate with the bread plug on top and a grated carrot and chilli salad (sambals) on the side.
