Grandma's wayCrisp fried beef strips in a sweet, spicy ginger glaze with vegetables.

Beefflank or sirloin, in thin strips
Cornflour (cornstarch)½ cup
Egg1
Cooking oil (vegetable oil)for frying
Gingera big thumb, in matchsticks
Garlic3 cloves
Carrot1, in matchsticks
Red bell pepper (red capsicum, red pepper)1, in strips
Onion1, sliced
Red chilli powder (indian red chili powder)chilli flakes
Sugar⅓ cup
Rice vinegar3 tbsp
Soy sauce2½ tbsp
Water¼ cupMethod
- 1Toss beef with egg, then cornflour, until each strip is coated.
- 2Fry in hot oil in batches until very crisp, 3 to 4 minutes. Drain.
- 3Stir fry ginger, garlic, carrot, pepper and onion in a little oil for 2 minutes.
- 4Add sugar, vinegar, soy, water and chilli and boil until syrupy. Toss in the beef.
Serve it like thisPile on a platter over steamed rice with sesame seeds and spring onion. Serve straight away while crisp.
