Chickpeas, dry1 cup, soaked overnight
Water3¼ cups
Curd (plain yogurt, natural yoghurt)1¼ cups, whisked
Ghee3 tbsp
Whole spicescloves, cinnamon, black and green cardamom, bay leaf
Cumin seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)2 tsp
Red chilli powder (indian red chili powder)½ tsp
Garam masala½ tsp
Raisins1 tbsp, optional

- 1Pressure cook the soaked chickpeas with water and salt for 5 whistles. Let pressure release naturally. Drain, keeping the water.
- 2Heat ghee, add whole spices, cumin and asafoetida, then the chickpeas. Fry 5 minutes.
- 3Whisk the curd with turmeric, coriander and chilli powder. Lower heat and pour into the pan, stirring continuously until it boils.
- 4Add a little chickpea water and simmer on low, stirring often, until thick and the ghee surfaces. Add raisins and garam masala.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
