Ingredients

Chicken, curry cut (bone in chicken, small pieces)600 g, curry cut
Toor dal (split pigeon peas)⅔ cup
Masoor dal (red lentils)¼ cup
Moong dal (split yellow mung beans)2 tbsp
Pumpkina wedge of red pumpkin, cubed
Brinjal (eggplant, aubergine)1 small, cubed
Fenugreek leavesa small handful
Tomato2 medium, chopped
Onion2 medium, finely sliced
Ginger garlic paste1½ tbsp
Green chilli2
Dhansak masala1½ tbsp
Kashmiri chilli powder1 tsp
Turmeric (ground turmeric)¾ tsp
Tamarinda small ball, as pulp
Jaggery2 tsp
Ghee3 tbsp
Mint leavesa few sprigs
Coriander leaves (cilantro)a handful
Saltto taste
Waterabout 5 cups, divided

Method

5 steps
  1. 1Wash the dals and pressure cook with the pumpkin, brinjal, methi, tomato, green chilli, turmeric and 4 cups water for 4 whistles. Let the pressure release naturally.
  2. 2Blend or mash until smooth.
  3. 3Heat the ghee, fry half the onion until golden, add the ginger garlic paste, dhansak masala and Kashmiri chilli, then the chicken. Sear for 5 minutes.
  4. 4Pour in the dal, tamarind, jaggery, salt and water as needed. Cover and simmer until the chicken is fully cooked.
  5. 5Fry the remaining onion until crisp and brown. Top the dhansak with fried onion, mint and coriander and serve with brown onion rice and kachumber.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
