Ingredients

4 servings
Chicken, boneless500 g boneless thighs, in strips
Turmeric (ground turmeric)½ tsp
Coriander powder (ground coriander)1 tsp
Garlic2 cloves, grated
Soy sauce2 tbsp
Brown sugar1½ tbsp
Cooking oil (vegetable oil)1 tbsp
Peanut butter⅓ cup smooth peanut butter
Thick coconut milk⅔ cup coconut milk
Lemonjuice of 1 lime
Cucumber1 cucumber, in chunks

Method

5 steps
  1. 1Mix turmeric, coriander, half the garlic, 1 tbsp soy, 2 tsp sugar and the oil and coat the chicken. Soak wooden skewers in water.
  2. 2Marinate at least 20 minutes, then thread onto the skewers.
  3. 3Grill or griddle, turning, until charred in spots and cooked through.
  4. 4Warm the peanut butter, coconut milk, remaining garlic, soy, sugar and the lime juice with a splash of water, whisking until smooth.
  5. 5Serve the skewers with the sauce and cucumber.
Serve it like this

Lay the skewers across a platter with the peanut sauce in a bowl and cucumber chunks scattered around. Snip the pointy ends for little ones.
