Ingredients

5 servings
Mutton (goat meat)300 g lamb, small cubes
Freekeh½ cup cracked freekeh, rinsed
Tomato2, grated
Tomato puree¼ cup
Onion1 large, grated
Chickpeas, boiled1 cup cooked
Coriander leaves (cilantro)½ cup chopped
Mint leaves1 tsp dried mint
Cinnamon½ tsp
Kashmiri chilli powder1½ tsp, for paprika
Black pepper½ tsp
Cooking oil (vegetable oil)2 tbsp
Saltto taste
Water6 cups

Method

4 steps
  1. 1Brown the lamb in oil with onion, cinnamon, paprika, pepper and half the coriander.
  2. 2Add tomato and puree, cook until thick, then pour in the water. Simmer covered until the lamb is nearly tender.
  3. 3Add the freekeh and chickpeas and simmer, stirring often, until the grain is tender.
  4. 4Finish with dried mint, the rest of the coriander and salt.
Serve it like this

Ladle into deep bowls, scatter coriander, serve with lemon wedges and crusty bread or bourek.
