Ingredients: 600 g poached and shredded chicken, boneless; 1/2 cup mayonnaise; 1/2 cup hung curd (greek yogurt); 1 small finely chopped onion; 2 tsp cooking oil (vegetable oil); 1/2 tsp turmeric (ground turmeric); 1 tsp coriander powder (ground coriander); 1/2 tsp cumin powder (ground cumin); 1/2 tsp red chilli powder (indian red chili powder); 3 tbsp mango chutney or 100 g ripe mango, diced ripe mango; 1/4 cup raisins; 1/4 cup flaked and toasted almonds; 2 tsp lemon juice; 2 tbsp coriander leaves (cilantro); Salt, to taste

Chicken, boneless600 g, poached and shredded

Mayonnaise½ cup

Hung curd (greek yogurt)½ cup

Onion1 small, finely chopped

Cooking oil (vegetable oil)2 tsp

Turmeric (ground turmeric)½ tsp

Coriander powder (ground coriander)1 tsp

Cumin powder (ground cumin)½ tsp

Red chilli powder (indian red chili powder)½ tsp

Ripe mango3 tbsp mango chutney, or 100 g ripe mango, diced

Raisins¼ cup

Almonds¼ cup, flaked and toasted

Lemon juice2 tsp

Coriander leaves (cilantro)2 tbsp

Method

4 steps

1Poach chicken in salted water 12 to 15 minutes until no pink remains. Cool and shred.
2Fry onion in oil, add spices and cook 1 minute. Cool.
3Mix mayo, curd, spice paste, mango, lemon and salt.
4Fold in chicken, raisins and most of the almonds. Top with coriander and remaining almonds.

Serve it like this

Serve on a bed of lettuce with rice salad, or pile into soft bread for sandwiches. Chilled.
