Ingredients

4 servings
Maida (all-purpose flour, plain flour)1 cup
Egg1
Thin coconut milk1 cup
Pandan leaves4 leaves, blended for juice
Salta pinch
Cooking oil (vegetable oil)to grease
Fresh grated coconut1½ cups fresh
Jaggery½ cup
Water¼ cup, for the filling

Method

4 steps
  1. 1Melt jaggery with water and a pandan leaf, add coconut and cook until sticky and dry.
  2. 2Whisk flour, egg, coconut milk, pandan juice and salt into a thin batter.
  3. 3Cook thin crepes in a lightly greased pan on low until set; do not brown.
  4. 4Spoon filling on each crepe, fold sides in and roll tightly.
Serve it like this

Cut each roll in half on the diagonal to show the brown filling, arrange on a banana leaf and serve with tea or coffee.
