Ingredients

4 servings
Whole green moong (mung beans)1 cup whole mung beans
Water5 cups
Cooking oil (vegetable oil)1 tbsp
Garlic5 cloves
Onion1
Tomato2, chopped
Porkdiced, or prawns
Fish sauce1½ tbsp
Drumstick leaves (moringa leaves)malunggay (moringa) leaves, or spinach
Saltto taste
Pork rinds (pork scratchings)crushed chicharrón, to top

Method

5 steps
  1. 1Pressure cook the mung beans with the water for 3 whistles, then let the pressure release naturally. Or simmer 45 minutes.
  2. 2Fry the garlic, onion and tomato in the oil until soft.
  3. 3Add the pork and cook until no pink remains, then add the fish sauce.
  4. 4Add the beans and their liquid and simmer 10 minutes.
  5. 5Stir in the moringa leaves for 2 minutes and top with chicharrón.
Serve it like this

Serve in a bowl with steamed rice and fried fish on the side, chicharrón crumbled on top.
