Ingredients

Brinjal (eggplant, aubergine)3 long eggplants
Egg4
Salt½ tsp
Black peppera pinch
Garlic1 clove, grated
Cooking oil (vegetable oil)2 tbsp
Tomato ketchup (ketchup)banana ketchup or tomato ketchup, to serve

Method

4 steps
  1. 1Grill the eggplants directly over a flame, turning, for 10 minutes until charred and soft.
  2. 2Cool slightly, peel, keeping the stems. Flatten each with a fork into a fan.
  3. 3Beat the eggs with salt, pepper and garlic. Dip each eggplant in the egg.
  4. 4Fry in hot oil 2 to 3 minutes a side, spooning extra egg over, until golden and set.
Serve it like this

Serve on a plate with steamed or garlic rice, a puddle of banana ketchup and sliced tomatoes.
